Our olive trees are a native variety typical for this climate, so-called Oblica variety, located in the field Trtuša, in, for us, the most beautiful National Park Kornati. Some olive trees there are older than 300 years and as a proof of their extraordinary quality, our olive oil has been winning numerous gold and champion medals for years at the prestigious competitions. The olive trees are not treated with any protection or similar chemical agents. Feeding of the trees is facilitated in a natural way, i.e. using free-range grazing sheep. Our mission is an exclusive organic production indeed, and our aim is to proudly point out the ECO certificate for olive oil of extreme quality produced in a completely natural way respecting the centuries-old tradition of the olive-growing in this area.

What is necessary to produce one litre of the extra virgin olive oil Kraljica Kornata?

Olive harvest usually takes place in early October, when olives reach their maturity. Picking is done by hand to preserve their quality as much as possible. It is worth mentioning that in order to reach some olive trees it takes up to 45 minutes on foot along the field paths and jumping over the old drywalls that are forming borders between the parcels. After the picking, the olives are put into small-volume transport containers in order not to be damaged or squashed and thus lose its juice and quality on the way to processing.

Picked in such a way, they are transported by a small tractor at the end of the day, from the field to the sea, i.e. to a small storage on the waterfront, and then carried on the boat. It takes further 18NM (ca. 35 km) to get to the mainland, where we move them into a transport truck, and drive them on the same day to the olive oil mill (50 km) with an ECO certificate. The certified oil mill is a guarantee of the high-quality processing, using cold pressing technique in which the refining process temperature must not exceed 25°C. In this demanding process lies the secret of the quality of our olive oil.

Following all these rules, the final result is a wonderful olive oil of special quality.
